Can anyone point me towards existing work I could use? Open course material and syllabuses I could use, with the necessary references?

If I was to do the same, and my students already knew haskell (which will be the case after a few courses), I'd certainly read Chris Okasaki's book (or his thesis) on data structures in functional programming. Greetings, Pierre
