Oops, I had the misconception that one couldn't add a HasCallStack constraint to method implementations.
I think you have to declare:
instance Foldable [] where foldl1 = foldl1List
foldl1List :: HasCallStack => (a->a->a) -> [a] -> a foldl1List = ...
