Well, isn't GnomeShell part of the new Mutter WM? So if you manage to work out how to use xmonad, then AFAIK you lose the shell.

That page doesn't explain how to replace metacity with something else, like xmonad, when using Gnome3 in fallback mode. I've failed to find anything about this online; I had a working setup in Gnome2, and the configuration is still there when looking in gconf, but it doesn't work in Gnome3.
